If you are a blue cheese lover like me, this is a great lunch time snack that isn’t too heavy on the calories weighing in at 467 calories.
Fry your bacon lardons until they are nice and crispy. I use spray oil in order to keep things healthy. Crumble the stilton and walnuts into small pieces. Slice your apple thinly. Chuck some lettuce into a bowl, add you apple slices and sprinkle the walnuts, bacon and stilton on top. Splash over the blue cheese dressing and season with pepper.

- a healthy splash of blue cheese dressing (I use Paul Newmans)
